Celariac Soup

Celeriac Volute

Celeriac is not everyone first thought when making a soup, but for us this is a hidden gem of a vegetable, its depth of flavour and creamy sweet after taste is just delicious.

This recipe combines the rich and creamy with an equally bold herb to provide a taste sensation in the mouth, we give you Celeriac Volute with burnt Sage butter and a crispy Sage

Lacquered Duck

We tested this recipe on one of our early practise evenings, to say our guest enjoy is a bit of an understatement…they loved it! And were disappointed there were no seconds! Definitely one we will be doing again by the response we got.

The sweet, rich flavour of the Chinese style syrup combined with pungent spices is spectacular with duck.

Baked Lemon and Rhubarb Tart

The Rhubarb season is upon us, Jo and I simply adore this rich versatile vegetable (by origin), but more commonly used as a fruit. It’s got bags of flavour; works well in both sweet and savoury dishes and its pretty colour is enough to bring any dish to life.

This recipe on paper may sound like a tart, tarte, but the sweet lemony filling with the tartness of the Rhubarb works beautifully together.
